Pizza Perfect!


This is a pizza I made from scratch for Stefan and I thought I'd share the recipe! It was so fun to make! I have fallen in love with cooking since I got married! I'm not saying I am any good at it, but I love learning new things and trying new recipes!

Ingredients
1 Rhodes frozen bread loaf
6 ounce chicken breast, skinless and diced
1 cup barbeque sauce, halved
1 cup non-fat mozzarella cheese, grated
1/2 onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 cup cooked bacon bits
Pizza Dough
I suggest using Rhodes frozen wheat loaf.  Place the loaf in a greased bread dish and let it rise for 5-6 hours.  Once the loaf has doubled in height, remove it from the pan and roll into a 12 inch circle (or in this case a heart!)

Lightly spray frying pan with non-stick cooking spray. Quickly cook diced chicken, onion, and 1/2 cup BBQ sauce until chicken is no longer pink. Remove from heat.  Pre-bake pizza dough at 400°F for 10 minutes. Spread remaining 1/2 cup BBQ sauce over pre-baked crust. Sprinkle with mozzarella cheese if desired. Arrange chicken/onion mixture, and peppers, on top. Bake at 350° F for 10-15 minutes. Top with cooked bacon bits!

Temples, Toddlers, and Tomfoolery

We had the opportunity to attend The Temple last week.  We went to the Timpanogas Temple, it's a very special place for us because ironically enough we both took out our endowments in that Temple. We had intentions of doing sealing when we got there, but they were all full so we did a session.  We were also asked to be the witness couple.  The spirit was so strong in The Temple and everything I learn while I am there continues to amaze me.  The fact that we were the witness couple was a blessing also because I paid much more attention to everything and I am so thankful for that opportunity.  There's nothing that beats being in The House of The Lord with my best friend. I couldn't stop thinking about eternity, and spending it with my sweetheart. I can't wait.

I absolutely love our ward and all the people in it.  It is, in fact a family ward, but with us being so close to BYU, it is full of young families and newlyweds.  There are approximately 3 youth in our ward... and at least 8 pregnant women.  No joke.  A couple of weeks ago a cute family with 2 young kids sat next to Stefan and I when they came late into Sacrament Meeting.  Stef was having a blast playing with their little boy Judah while his mommy, Chrissy, was trying to get snacks out for his sister.  Later that day I was privileged to hold Judah during Relief Society.  After church, I offered my babysitting "skills" to Chrissy.  She seemed very excited about it, and said that her and her husband Glenn don't get to go out on dates anymore, which makes sense but breaks my heart.  Stefan was also very excited about babysitting.  I have loved to watch him light up to the children of our ward and kids in general.  It's so cute to see him baby hungry.  He talks about having sons all of the time, and even though I am excited for that also, it is in the distant future.  I am still thoroughly enjoying OUR time together.  I don't want to share my Stefan time.  And after babysitting these cute kids, Judah and Savannah, although it was very fun, I am glad it's still just the two of us.

I am happy to have some married friends.  A couple of Stefan's friends from high school are married and I love their wives.  It's fun to go out and do things with "the boys" and know that there will be at least a couple girls around.  We have had some fun times with Chad and Anais Moody lately.  They are a great couple and they just celebrated their 1 year anniversary! Way to go guys (: Anais is such a sweetheart and so easy to talk to.  Me = Blessed.  To have such wonderful people in my life.  We had a great idea to get up really early and go to Denny's one morning before work and enjoy some delicious breakfast.. off their value menu.  I think we met them there at 6:30? I can't remember now but I do know that Stefan and I just rolled out of bed in our PJ's and showed up, while Chad and Anais were dressed and ready to go for work.  It was a fun little get together and I really enjoy the company of other married couples.  Especially caring people such as the Moody's.  We had a great time and despite the early hours, I'm glad I snapped some pics.

My Little Darlin' Is A Firecracker

It's fun to spend your "first" holidays together and to start developing family traditions! I like the idea of making holidays special in our home.  On Sunday night, Stefan and I made some delicious homemade sugar cookies AND homemade cream cheese frosting to decorate them, to begin our Fourth of July celebrations. Stef was such a good help in the kitchen.  We suffer from little-to-no counter space syndrome in our apartment which makes cooking and baking very difficult sometimes.  But we love our adorable apartment, it has character! And we make it work.

And everybody knows when there is frosting in the kitchen there is bound to be a frosting fight.

And here is the final product! We got a little lazy by the end and just started globbing the frosting on.  I think Stefan may have even eaten more cookies than he actually frosted..

On Monday, the 4th, we went to Burston Pond's near Mona, UT.  It was super crowded and overcast which kind of ruined our plans.  But it made for some good entertainment while we watched tons of people make fools of themselves on the rope swings.  Later Stefan and I came home and resorted to our most typical form of entertainment, the dollar theater.

I love my husband.  I never get tired of saying it.  He is the best thing that ever happened to my life and I love knowing that I get to spend eternity with him.  He's such a strong, loving man and he means everything to me.
